French toast with a Twist!

 
This recipe has two parts...it's important to read both first!
 
Part 1 - The Berry Compote
 
INGREDIENTS:
 
500grams of sugar
250grams of water
1kg of frozen berries
Cinnamon Sticks
 
METHOD:
 
Heat the sugar and the water with the cinnamon sticks and allow to simmer for 5 minutes
Remove from the heat and add the frozen berries
This is the stored in the fridge and reheated as needed
 
Part 2 - The Main Dish...The TOAST!
 
Take 3 eggs and whisk (move your wrist in a figure off eight and hold the whisk like a pencil)
Slice the bread quite thick
Dip the bread into the egg allow to soak
Place the soaked bread into a preheated pan with a bit of oil
Cook until golden brown turning occasionally.
 
 
Place on a plate, pour over the heated berry compote
Dust with icing sugar and then place the chocolate shavings on the plate.
