THE OMELETTE OF KINGS:

 
INGREDIENTS:
 
Brie cheese 1/3 of a block per person
4 eggs per omellette
Bacon
Rocket
Sweet Chilli
Spring onion
Oil
 
Bread for toast (as to your own preference)
 
METHOD:
 
Cook the bacon and have it ready to go into the omellette
Whisk the eggs in a figure of eight( Etienne) until light and fluffy
Gently fry the spring onions in the pan with a bit of oil
Place the eggs into the hot pan stirring until it begins to set
Add the other fillings
Close and turn out onto the plate
